Tomato-Spinach Panini

This sandwich is amazing! It completely hits the spot when you are craving that grilled cheese comfort. This is a great way to sneak in some extra veggies as well, so if your not a big veggie person, give this a try - it also features that wonderful little pesto that I featured last week.


















INGREDIENTS

2 Pieces Whole-Wheat Bread (or your favorite Gluten-Free bread if you are Gluten-Free)
1 Slice Provolone Cheese, cut in half (soy cheese if you are vegan or diary free)
1 Tb. Pesto Spread
Sliced Tomato
Spinach


DIRECTIONS

Spread a little bit of the pesto on each piece of bread. Layer on 1/2 piece of provolone, tomato slices, spinach and the other half of provolone. I don't have a panini maker, so I use my waffle iron - works like magic and saves money and space on a new kitchen appliance.
