I have people asking me all of the time the best things to eat for different meals throughout the day. I try to keep a lot of recipes on the site, but wanted to do a little mini-series of quick/healthy bites that you can use for staples on busy days. Take a look on the Recipes page for specific recipes, but here are my top 10 healthy go to's for breakfast.
1. Homemade Granola
I eat this about half my mornings. Now, admittedly it does take some time on the front end to make it (2 hours be be exact), but the house smells amazing while it cooks, and once it's done it makes such a huge batch that will last you for some time. 1/2 cup of granola with fresh berries and almond milk and I am set until lunch. It's so satisfying that I don't need a morning snack at all. My favorite breakfast. Here is my recipe if you'd like to try it out:
2. Oatmeal
There's nothing better on a cold winter morning than a hot bowl of yummy oatmeal. Throw in a few dried blueberries, a couple of slivered almonds and topped with a splash of almond milk and it totally hits the spot. No time to make oatmeal? Instant is fine, just make sure to get plain, and then add your own things to it to keep the sugar content down. If I feel I need a little sweetener boost I will use either a tiny bit of powdered Stevia or a drop or two of honey.
Note: there are quite a few overnight crockpot recipes out there, and I am going to play around with those come fall. If I hit on a winner I will definitely share! A great way to wake up to a healthy, hot breakfast.
3. Egg Whites on Toast
Saute up a handful of spinach, top with two egg whites and then top the whole thing onto a piece of whole-wheat toast, or in a whole-grain english muffin. A nutrient/protein powerhouse that is portable to boot. Can't beat that.
4. Whole-Grain, Low-Fat Muffins
I don't buy muffins. As a matter of fact, I can't remember the last time I had a store bought muffin. They are so greasy and refined you really might as well have a cupcake for breakfast - at least then you would be being honest with yourself. I do however LOVE muffins for breakfast. They are a super quick, grab and go food that go perfect with that warm cup of green tea. I make up a batch of muffins on a quiet day - usually a Sunday afternoon - and then freeze them. The night before, if I want a muffin for breakfast, I just grab one out of the freezer and it's good to go in the morning. Perfect for those mornings that you hit the ground running. I have all of my favorite muffin recipes on the site..... and of course I am always playing around with muffin recipes I like them so much, so it will be added onto as time goes on.
5. Fruit Smoothie
I love a good smoothie, especially in the summer time when fresh fruit is so readily available and the weather is warm. Throw a handful of fresh fruit, frozen banana, vanilla yogurt and some milk in a blender, and wala - breakfast. Give my award winning shake a try (and I mean that literally! 2nd place out of about 200). Don't let the spinach throw ya, you won't even taste it once your shake is made.
There ya have it folks, what I eat pretty much every day during the week. On the weekends I will sometimes have pancakes, omelets, or some other yumminess that takes a little more of my time, but during the week it's pretty simple and east stuff.
