Sweet Potato Fries

I love french fries. When it comes to comfort foods, they are definitely at the top of my list. I wish they would come out with a study that proved once and for all french fries built muscle, helped make you heart healthy and helped keep your waist trim and sexy. Alas, it looks like they will remain on the "eat sparingly" column. With my sweet potato fries however, you can eat your fries almost guilt free: and using sweet potatoes in place of russet gives you a boost of vitamin A, which is great for the immune system.







Ingredients:

1 Large Sweet Potato
1 Tb. Olive Oil
1/2 tsp. Onion Salt
1 tsp. Seasoning Salt
Cooking Spray

Directions:

Preheat your oven to 425 degrees and spay a baking sheet with non-stick spray. 

Cut sweet potato into strips and place in a large zip-lock bag. Add olive oil, onion salt and seasoning salt - toss potatoes in bag until they are evenly and well coated. Lay in a single layer on prepared baking sheet. Spray tops of fries with a little more non-stick spray.

Bake for 20-30 minutes, or until starting to get golden brown - cooking time will vary based on how thick you cut your strips. Sweet potatoes will not get as crispy as russets, and will remain slightly soft.
